Persimmon Jelly

All around our new house we have Persimmon trees.  I'd never even heard of Persimmons until I moved out there, but our friends tell us that they are a yummy fruit and really good to eat once the fruit turns black.

On a mission to test this out, the boys and I picked a whole bucket full of black ones over the course of a few days. It was difficult to find good black ones that they deer, raccoons, and birds hadn't gotten to first, but we managed.

After washing the fruit, I boiled it so that I could get the juice.
I didn't have any cheese cloth, so I strained it through one of Chris' old t-shirts. (It was clean)
Then I started the jelly making process.
The juice is very black.  I would like to call it a dark plum color, but I would be lying....it's black.

The final result is some very tasty.....very black jelly.

I'm a little leery about giving Black Jelly as a gift, so if you want some let me know.

SUPER Kindergarten

It wasn't the easiest decision, but we decided to keep our boys in Kindergarten for another year.  We are calling it SUPER Kindergarten.  They both have new teachers.  Heath has Mrs. Audrey Holmes, and Hunter has Mrs. Kindra Tutle.  They are both super excited and very happy with their teachers so far.  Of course, they will miss their other friends that went on to 1st grade, but they will make new friends soon.

July

The twins and I spent the 4th of July at home.  We had hamburgers at my parents house, then went into town to watch the fireworks.  Daddy was, of course, working the lakes.

Soon after the 4th, we went to our favorite river destination.  We had a ton of fun.  The boys fished and I read my books.  We caught fish and swam a lot.

Wild and Mild entertained us with their guitar playing abilities in a "fireplace hearth concert."

We went to the Oasis and had a wonderful weekend with friends.  Heath caught numerous bass, a couple of perch and almost caught a huge catfish all by himself.
Hunter caught some bass and perch, too, but he struggles with the patience needed to fish.
Since then, we've been home doing normal "home" things and swimming at the tank every afternoon.  I still am not letting anyone mention that dreaded "S" word that will be starting up again soon.  We are enjoying our summertime too much.

June

Here is the recap....

We went to Kali's birthday party at Stockton's Fun Center.  We had a blast.  Heath beat everyone in bowling.  The big girls beat the big boys.  Uncle Phillip wasn't happy. Hehe.  Putt Putt golf was a wild adventure.  Aunt Kay and I were unable to keep score because H&H&Kali were too dangerous with the balls and clubs.  We opted for survival.
I hosted a baby shower at our house for a sweet lady from our church.  It was fun and there were a ton of people.  I think it turned out really nice.
We went to Ruidoso, NM with our besties.  When we arrived, there were 4 big bull elk right outside our cabin.  It was the highlight of my trip.  So cool!
In Ruidoso, the boys went fishing, while the girls slept late and shopped.  It was the perfect vacation.
We went to the "fun place" as the boys call it.  They loved the go carts...
...and the bumper boats.  Although, after the bumper boats, not a single person was dry.
We attempted putt putt golf again...it didn't go any better the second time around.  Craziness!
We hiked in the forest.  The boys also skinny dipped in the mountain stream.  I didn't get pictures of that...I didn't think we needed to share that.

Summertime Update

So far this summer we have been busy, busy, busy, but I'm not complaining, because we have been doing what we love!

The boys and their bestie got to go fishing with their daddies, while the mommies got to have a fun getaway by ourselves!!  Whoo hoo!!!

We've been to see Lolly and Pop and we have stayed out WAY past our bedtimes and caught frogs WAY bigger than frogs should be allowed to grow.

Have you met my husband???  Of course there would be fishing involved! Duh!

Just a quick update, I off to enjoy some more Sweet Summertime!
